    • 2 cups whole wheat flour
    • ¾ cup sugar
    • 2 teaspoons baking powder
    • ½ teaspoon salt
    • 2 cups fresh or frozen blueberries
    • ½ cup milk
    • ½ cup melted butter
    • 1 egg
    • 1 teaspoon vanilla extract


    • Preheat oven to 375 degrees. Butter muffin tin.

    • In a medium bowl, mix flour, sugar, baking powder and salt.

    • Add blueberries and stir until blueberries are covered.

    • Blend milk, melted butter, egg, and vanilla. Pour over the flour mixture.

    • Mix until combined. The batter will be stiff. Divide into muffin cups.

    • Bake 25 minutes. Cool. Serve with butter.
